Orange Cream Ebelskivers

A light citrus delight for breakfast or a late night treat.  These little Danish treasures are hard to resist anytime of day.  Using the special Ebelskivers pan and a pancake like batter these delicious treats will brighten up your morning.  I purchased my pan from Williams Sonoma, but the traditional ebelskiver pan is available from many kitchen specialty stores.  They have a traditional round shape with 7 deep round wells.  The resulting treats look like a cross between a pancake and a dougnut. For best results you should make these just befor serving.  This recipe should feed 2 to 3 hungry guests.

 

For the Filling

  • 1/2 cup Whipped cream cheese
  • Zest of 1 Orange
  • 1/2 teaspoon of orange oil
  • 1 Teaspoon Agave syrup, honey or your favorite sweetner.
Whip the cream cheese , zest, orange oil and syrup until light and fluffy. Set aside

For the Orange Batter

  • 1 cup cake flour - The cake flour makes them a bit lighter, but you can use regular flour if you don't have cake flour handy.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs - divided
  • 1 Tablespoon Agave Syrup
  • 1/2 cup milk
  • 1/2 cup fresh orange juice
  • 2 Tablespoons butter
Prepare the batter.  In a large bowl combine the dry ingredients.  Combine the egg yolks, syrup, milk, and OJ. Stir until well blended, it will be a little lumpy.    Whip the egg whites until stiff but not hard.  Fold the whites into the batter, don't over mix, but you should not have any whites  showing.  Use the batter right away,
Brush the walls of your ebelskivers pan with the melted butter, heat the pan over a medium flame.  When the butter starts bubble, add about 1 Tablespoon of the batter to each well of the pan. Working quickly drop a teaspoon of orange cream in the center of each, the cover with 1 tablespoon of batter.  cook about 3 -5 minutes until bubbles start to pop on the top, just like a pancake.  Flip to brown the second side.  Work in batches keeping the ebelskivers hot in the oven,  Serve immediately, dusted with powdered sugar, honey, or perhaps a compote of fresh Strawberries with a little Orange Liquere...
