This hearty egg dish is sure to please.  You can make substitutions for the red peppers, tomatoes and cheese.  Try sautéed mushrooms, peppers, and ham.

5 medium red bliss potatoes, shredded

3 Tablespoons Onion - Diced

1 Tablespoon Olive Oil

1 Tablespoon Butter

10 Eggs

1/4 cup diced roasted red peppers

1/2 cup shredded mexican cheese blend or your favorite cheese.

10 cherry tomatoes, cut in 1/2

 

  • Soak the shredded potatoes in water for 5 minutes to remove some of the starch. squeeze dry in a paper towel to release water.
  • Saute the potatoes and onions in large skillet with olive oil & butter, stirring often until brown, about 20 minutes\
  • In a large bowl, beat the eggs until well blended.
  • Flatten the cooked potatoes on the bottom of the skillet
  • Pour the eggs over the potatoes and add the red peppers and tomatoes and your favorite cheese
  • Cook on top of the stove for about 5 minutes until it starts to set.
  • Finish cooking the eggs under the broiler for about 8 minutes  or until the eggs are set.

These crisp and not to sweet triple chocolate cookies make an excellent wedding favor for your guests. Packaged in cute bags, your friends and family will go home with a tasty treat to enjoy over coffee in the morning.

Orange Cream Ebelskivers

A light citrus delight for breakfast or a late night treat.  These little Danish treasures are hard to resist anytime of day.  Using the special Ebelskivers pan and a pancake like batter these delicious treats will brighten up your morning.  I purchased my pan from Williams Sonoma, but the traditional ebelskiver pan is available from many kitchen specialty stores.  They have a traditional round shape with 7 deep round wells.  The resulting treats look like a cross between a pancake and a dougnut. For best results you should make these just befor serving.  This recipe should feed 2 to 3 hungry guests.

This healthy breakfast souffle takes a little while to prepare but is worth the effort. I have included healthy heart substitutions in the (  ).  This is our most requested recipe at the Inn on Poplar Hill, I hope you enjoy it.

Preheat oven to 350 degrees.

  • 1/2 Cup Oatmeal
  • 1 Cup Milk (1 cup skim milk or soy milk)
  • 1/4 Cup brown sugar (2 Tablespoons Agave Syrup)
  • 4 eggs Separated (egg whites & 2 Tablespoons of low fat cream cheese as a substitute for the egg yolks)
  • dash of salt
  • 1/2 teaspoon orange oil
  • 1 Tablespoon Orange Zest
  • 1/4 cup mix-ins, choose your favorite, dried blueberries, raisins, nuts what ever you have on hand
  • pinch of cream of tarter - this is added to the egg whites befor you beat them.  It helps the egg whites to whip up nicely.  If you don't have don't worry it can be omitted.
  • Dash of cinnamon or nutmeg

  • 8 Slices of Herbed Polenta
  • 8 Slices of a nice Italian Ham or Procuitto
